A healthy, diabetic-friendly recipe that’s full of flavor!
This dish combines the goodness of spinach and paneer, creating a flavorful and nutritious meal perfect for diabetic-friendly diets. Packed with vitamins and protein, it’s both healthy and delicious!
– 200g paneer (cubed) – 2 cups spinach (fresh or frozen) – 1 tbsp kasoori methi (dried fenugreek leaves) – 1 medium onion (chopped) – 1 medium tomato (pureed) – 1 tsp garlic and ginger paste – 1/2 tsp turmeric powder – 1/2 tsp garam masala – Salt to taste 1 tbsp olive oil
For the best flavor and texture, opt for fresh spinach. If using frozen, ensure it’s well thawed and excess water is drained.
Blanch the spinach leaves in hot water for 2-3 minutes. Cool and blend into a smooth paste.
Heat oil in a pan and sauté onions until golden brown. Add ginger-garlic paste, turmeric, and garam masala. Cook for 2 minutes.
Kasoori methi adds a unique aroma and bitterness that balances the rich flavors of spinach and paneer. It’s essential for the authentic taste!
Stir in the spinach paste and kasoori methi. Simmer for 5-7 minutes, allowing the flavors to blend.
Add paneer cubes and cook for 2-3 more minutes. Stir gently to coat the paneer in the spinach gravy.
If the gravy is too thick, add a splash of water or low-fat cream to achieve the desired consistency. It should coat the paneer nicely.
Garnish with fresh coriander. Serve with whole wheat roti or quinoa for a diabetic-friendly meal!
Pair this dish with low-carb sides like quinoa, brown rice, or a simple salad to keep it diabetic-friendly and balanced.
